Shrimp Scampi super easy and supper easy on your budget


And here is what it looks like. I tell you it took less then 30 minutes to cook. And what a luscious and yet so inexpensive meal it is.  the shrimp cost me $5.00 the pasta was $1.00 and the garlic butter maybe $0.25. 

So this meal cost $6.25 for 2 people and I have more pasta left over for me the next day for lunch. 


After the pasta is cooked I pour in the pan that I cooked the shrimp in. On medium I like to just get the flavor of the shrimp on the pasta.  


After I melt the garlic btter I add the shrimp and cook on medium for 3 minutes on each side, this is how we like it. You know how you like yours cooked. 

Garlic butter from WINCO, I love their garlic butter and it only cost $1.99 for the container.  


I use Costco Shrimp they come with shell ( I just shell them but they are already cleaned ) you get 20 for 1 lb  
I used 5 for each person

Welcome to my very first Follower

Pork Roast dinner done

Recipe for this is supper simple 


2 Onions cut into 8 pieces
1 tsp of salt
1 tsp of Mrs Dash Table Blend 
1 tsp of Granulated Garlic

Rub this on the pork roast, now the onions go under neath the Roast so that is not laying in the Juice when it bakes. No water needs to be added since the roast will make more then enough for a gray or just the juices like I like to use them for the veggies.

Wanted to show you guys what it looks like after I took it out of the Clay Baker. I know the picture did not come out to good. I had Hungry ppl not let me take another one. LOL 

Once the Meat is out of the Clay baker I added some garlic butter to the Onion and Juice mixture and of course the Brussel Sprouts, so that they can get some of that juice flavor in between all that green leafy goodness. 

So I cook this on 500 f for 1 hr then turned it down to 400 f for another hour. 
The Brussel Sprouts get just the stems trimed and the outer leaves cut of and just a quick wash under running water before I put them in the basket to steam on medium for about 20 to 30 minutes.

Here is my Clay Pot I use. With this you have to soak the pot for 15 to 30 minutes in cold water then load it up with waht you like to cook and it has to be put in a cold Oven or it will break. The best I have ever had.

Yes, it is still raining here by us. So it is a good day to get to do all that stuff that you always look at but really do not feel like doing...... lol yes even Hubby is helping.

Frikadellen ( german hand held meatloaf )

All my Ingredients where bought from Winco. I love that store they have the best Prices ever. 

These my Mom has made for us growing up in Germany and we could also buy these in the Imbiss ( like a fast food stand here in the US). I so love these and I wanted to make sure and share my Recipe for it. This is a great thing to make for camping because these can be eaten cold or just reheated in the Micro. Below you see what the finished product looks like. I sure hope you all will enjoy this. Happy eating :) Oh and in the back round you can see some of my Mustard's that I always have on hand, they can be eaten by themselves or on a bun. How ever you like it.

So here is the list of Ingredients :

3 lb Turkey Ground 
2 Eggs 
3 tbsp of my seasoning mix ( if you make it for the first time use 4 part of Paprika, 1/2 part of Curry, 1/4 of White Pepper. 
1 Diced Onion
1 1/2 Italian Bread Crumbs 
1 Tbsp of Salt or how ever much you like to salt.  





You can use what ever is your favorite Buns we like the Onion. Or eat them by themselves. 



I have made these kinda big ( lol ) so I had to cook them 9 minutes on each side. When I take them for camping I like to cook them just 5 minutes on each side because I know I will rewarm them in the Micro at that time they will cook all the way thru. I heat them each for 1 minute or 2 for 1 1/2 minutes.  



Just wanted to show you how good they looked and smelled when they were cooking 



Out of the mix I got 10 Patties but of course I made them big and oval, it is up to you how you want to shape and of course the thickness to. Just keep in mind that the cooking time will be less.


Here is what the it looks like all put together but not mixed up yet. I mix this very thoroughly  I want the season all the way thru. Believe me it is worth it. 




I cook them on a medium heat 



1/4 of pan up the side should be in oil this will ensure even cooking





Here is my ingredients all bought from Winco. I love Winco it is such a great store to shop and the best Prices ever.

Chicken Melt the next day

So I had a chicken melt leftover n heated it up in micro for 30sec n then again for 30sec. I have to say it is even better the next day.

Chicken Melt instead of Tuna Melt

Here is the finished Product oh boy was that so good and so simple to put together 

I buttered one side of the bread then when I put them in the Pan for melting I put the buttered side down first so that I can butter the other side before it gets turned over.
Here you can see my assembly. LOL this was so much fun........ and so good Bread, chicken mixture and a slice of Velveeta cheese.... what can be better on a cool day then that.
I know their is other stuff but for tonight it was the bomb

Ok so here is the Recipe:

2 cans of chicken in water 12.5 oz each make sure to shredded the Chicken since it comes in chunk
 ( no problem it is easy ) 
A Dash of Cayenne Pepper or more depending how you like heat or spicy 
1 tsp of Mrs Dash Onion & Herb seasoning 
1/4 cup of Famous daves Signature Spicy Pickles Chips, chopped fine 
( you can use what ever Pickles you like the best ) 
1/4 cup of chopped onions 
2 tbsp of Mayo 
2 cups of Shredded Cheese ( I use what I have on hand ) 

Mix this all together and let sit at room temp for at least 1 hr so that it gets the taste all the way thru and is not cold when you cook it. I have also added some Velveeta Cheese ( you do not have to but I wanted to surprise my hubby he loves Velveeta. He loved it.

BBQ PORK CHOPS N FRESH CORN SALAD

Tonights dinner was BBQ Pork Chops n Corn Salad

Chops where seasoned with Mrs Dash Onion n Herb

Corn Salad ingredients are as follow:

8 cobs of Corn (cooked for 3 min so that we have less stratch, cool with ice water n cut of cob )
4 pickling cucumber ( not pickled raw )
2 if each color young bellpepers
2 large Jalapeno"s seeded n veins taken out
1 bunch of Cilantro corasley chopped
2 Lime's ( just the juice )
1/2 of a red Onion
Salt to taste

Salad can be cooled n served we ate it room temp. I think the flavors came out better that way.

Hello all, I am at it again lol, yes I am making my Split Pea Soup and wanted to report how really inexpensive this is.

Spiral Ham and all the veggies cost is $30.00  out of this I am getting 7 weeks worth of lunch meat for my hubby. He loves the Spiral Ham for lunch meat. Of course we are getting enough Soup that I can feed 10 People easily and still have some leftover for 4 more meals. So to my count each meal and the leftovers and also the Lunch meat comes to each Cost of  drum roll please ................ $1.42 wow now that is a fantastic savings. I hope you all enjoy my blog n Video's n Post's. I am always trying to make the most out of each meal. :) you all know it is contagious :) :) :) ........ Reny.

Turkey Meatliaf done.

My turkey meatloaf came out fantastic, I have to say that the green cauliflower is really good tasting. Nuty in flavor I have to say. I so very much love it.

How to make Reny's Turkey Meatloaf





My recipe for making Turkey Meatloaf ( or as I call it Meatlove )

2 packages of Turkey Ground
1/2 off a big Onion

3 TBSP of Reny's Seasoning ( 4 part of paprika, 1/2 part of Curry, 1/4 part of White Pepper.

1 bag of Wheat crackers hand broken
4 Eggs
1 TBSP Seasalt

Turkey ground Meatloaf

Radishes

This is also one of my favorite snack foods, especially when eating my tuna salad. I also it them with all my Mexican dishes. I am learning though from this that Radishes are high in sugar so that would certainly something that I will need to look out for.
